How to make perfect ratatouille

This is an Italian version of a mixed vegetable salad and is served hot with your favorite breads. Recommendation: Focaccia, garlic bread, and whole- Wheal taste.

2-3 onions
4-5 tomatoes
2-3 Bhopal (yellow squash)
2-3 Zucchini
5-6 peppers(red, yellow, and green)
6-7 garlic, cut into slivers
2 tbsp. olive oil
To taste: oregano/basil, paprika
To taste: salt and pepper


1. De-stalk the tomatoes and blanch them for 30 seconds. Remove, cool in ice water and peel the skin. De-seed and cut into cubes. Reserve the tomato juice.

2. Heat oil in a pan. Add onions and let them turn translucent.

3. Add zucchini and yellow squash. Sauté.

4. Add in peppers and tomatoes. Toss well, pour in the reserve juice.

5. Sprinkle oregano, salt and pepper, paprika.
