Preparation:
1. Preheat a 20cm low on medium heat. Before the visiortherm pointer reaches the first red mark, add the sliced onions.
2. Cover and cook on low heat for 1-2 minutes and then add the vegetables, dripping wet. Cook for 10-15 minutes till soft.
3. Mix in the spice paste, salt and pepper. Cover and simmer for 15 minutes. Add the first water, curry leaves, coriander leaves and stir.
4. Simmer for 1-2 minutes more. Remove from heat and keep covered for a few minutes before serving. Serve hot with rice/ chapatti.
