salad tiede aux lardons easy recipe

1. Put 6tsp of the oil in a salad bowl with the wine vinegar, garlic, mustard and salt and pepper to taste. Whisk with a fork until thick.

2. Cut the bacon and bread into small dice. Heat the remaining oil in a frying pan, add the bacon and bread and fry over brisk heat until crisp and golden brown on all sides.

3. Remove with a slotted spoon and drain on absorbent kitchen paper.

4. Stir the cream into the dressing, then add the endive and warm bacon and croutons. Toss quickly to combine and serve immediately.

10 tsp olive oil
2 tsp wine vinegar
2 garlic cloves, crushed
1 tsp French mustard
salt and pepper
8 streaky bacon rashers, rinded
4 thick slices white bread, crusts removed
2 tsp single or double cream
1 small head curly endive,
leaves separated
