Kerala Recipes: Banana fry and chips

Following are the 2 easy make snacks recipes using banana. Banana Fry (Pazham Pori) and Banana Chips are the common snacks for evening tea times in Kerala.


1. Banana Fry:

Ingredients:

Banana (ripened) - 4 Nos (Medium size)
Myda (all purpose flour) - 1 Cup
Rice flour - ¼ Cup



Baking Soda - a Pinch
Turmeric Powder - ¼ Tbsp
Sugar - 150- 200 Gms
Oil - As required for deep frying
Cardamom Powder - ¼ Tsp
Salt - a pinch



Method of preparation:

Mix the Myda, Rice flour and a little of salt with water and make a paste. Add Sugar, Turmeric powder, Baking Soda, Cardamom powder to the batter, mix well and keep aside for 15-20 minutes.

Peel off bananas and make 4 slices each lengthily. Dip the banana pieces in to the batter and make sure to fully coat the mix on each piece.

Put a vessel on heat and pour enough oil for deep frying the banana pieces. Check the oil, if heated well, drop 2-3 pieces of batter coated pieces to the oil. Fry up pieces upside down up to brown.

Take out the fried banana pieces with a sieved spoon and let drain the oil fully. Drain out the excess oil if any using paper towels and can serve hot.


2. Banana Chips:


Ingredients:

Raw Bananas - 5-6 Nos (half ripened plantains can also use)
Turmeric Powder - 2 Tbsp
Oil - As required (Preferably Coconut oil)
Salt - As required


Method of preparation:

Mix the turmeric powder and salt with about 3 ltr of cold water. Peel off the raw bananas and wash well. Slice them with a chip slicer or knife, thinly and round in shape. (Thinner slices absorb the salt and turmeric well and will get crispier while frying). Dip the sliced pieces in the turmeric water for half an hour. Take out from the water and keep aside to drain completely.

Heat enough oil in a vessel to deep fry the slices. Put slices part by part in to the heated oil. Stir and fry up to crispy. Take out chips with a sieved spoon and let drain the oil fully. Spread on a paper, keep for 1-2 minutes and can serve hot.
