South Indian Recipe: Vegetable Stew

The following is a famous curry type of south, uses with various Appams, Parotta etc, commonly as a breakfast dish. The taste of creamy coconut milk with vegetables and lesser masala make this dish attractive to children and elders. It is fine for patients restricted to keep less masala foods. The Appam and Stew is a famous traditional food combination in Kerala.


Ingredients:



Coconut Milk - 2 ½ -3 Cups
Peas - 100-150 Gms
Potatoes - 200-250 Gms (2-3 Nos)
Carrot - 100-150 Gms(2-3 Nos)
Onions - 2 Nos (Medium)
Green Chillies - 4-5 Nos
Curry Leaves - 10-12 leaves
Ginger - ½ Inch Piece
Cashew Nuts - 10 Nos
Coconut Oil - 1 ½ Tbsp
Spices - ¼ Tbsp (Powdered Cloves/Cinnamon/Cardamom )
Black Pepper Powder - ½ Tbsp
Salt - As required


Preparation:

Apply the following easy way to extract coconut milk. Grate 2-3 coconuts, use little warm water and blend grated coconut in a mixer for few minutes. After cooling, fill in thick muslin and squeeze to as much milk as possible. Repeat the steps 2-3 times with the same coconut and keep the milk aside.

Wash and clean the Potatoes and Carrots. Remove crust, and cut in to small ¼ inch cubes. Slice the onions at length and thinly, chop the ginger in small slices, cut green chillies lengthily and keep aside.



Put a vessel on heat. Add 3-4 cups of water, put the cubed potatoes and carrots, peas, sliced onions, sliced green chillies and chopped ginger. Add salt as required, cover with a lid and keep to boil on low flame for 10 minutes. Check the peas and potatoes. If cooked, remove the lid and keep for some more time on low flames. The purpose is to dried out the excess water if any, in the vessel. Add Black pepper powder and powdered spices (Cloves,Cinnamon and Cardamom). Mix well, but care not to shatter the vegetable pieces.

Add the coconut milk, and a bit coconut oil and stir well, check the salt, add if required, add separated cashew nuts, cook for 4-5 more minutes on low flame, add curry leaves to it and close the lid. It can serve with various rice made dishes like Appam or Parotta etc.
