Fry recipe: Bitter Gourd Roast

Bitter gourd is one of the most nutritious but less consuming vegetable. The excess bitterness makes people hesitate to include in day to day food. Bitter gourd is a good source of iron, potassium, essential vitamins and other minerals.



Consumption of Bitter gourd has been proved against constipation disorders and helpful to slimming effects. Regular usage helps to prevent many complications like diabetes, psoriasis, hypertension, eye complications, cough, diarrhea and some sort of cancers. The following is an easy to make recipe of bitter gourd with minimum bitterness.


Ingredients:



Bitter gourd - 2 Nos (Medium size)
Chilly Powder - 1 Tbsp
Turmeric Powder - ¼ Tbsp
Chickpea flour - 3 Tbsp
Curry Leaves - 5-6 Leaves
Vinegar - 5 Tbsp
Coconut Oil - As required for deep frying
Salt - As required


Method of Preparation:



1. Wash Bitter Gourds before cutting which prevent the lose of Vitamins & Minerals (applicable for all vegetables)

2. Slice Bitter gourds thinly in small rounded pieces, remove seeds and keep aside.

3. Add the Chickpea flour, Chilly powder, Turmeric Powder, Vinegar, Curry leaves and required salt.

4. Mix and rub all the contents well with hand to absorb the masala in bitter gourd pieces, add 1 or 2 Tbsp vinegar more if required and keep aside for half an hour.

5. Heat a Kadai and pour adequate coconut oil to deep fry.

6. Add bitter guard pieces in small batches and fry up to brown and crispy.

7. Put in a strainer to drain the excess oil and can serve hot with rice.

8. Small sliced coconut cubes can add to the mix before frying (optional). The presence of fried crispy coconut pieces will make this dish tastier.
